Sweet & Zesty Chicken Salad

This chicken salad is sure to delight any nosher in your life! It came about the other day as I was just throwing some things together, tasted it & deemed it major blog worthy! The best part is that you can make a giant serving over the weekend & then serve it over lettuce or on bread for lunch or dinner for the days to come.

Sweet & Zesty Chicken Salad

Ingredients:

3 large chicken breasts
3 tbsps mayo
3 tbsps nonfat yogurt
2 tbsps apricot preserves
2 tbsps chili garlic sauce (a Vietnamese condiment found in the international dept of a grocery)
1/4 cup dried cranberries
1/4 cup chopped walnuts
1/4 red grapes (sliced in half)
salt & pepper to taste

Directions:

1. Begin by adding the chicken breasts to a large pot of boiling water & chicken bouillon seasoning (about 1 tsp). Cook for 15 minutes.

2. Mix the cranberries, walnuts & grapes in a large bowl.

3. When the chicken is finished cooking, place on a large cutting board and shred with two forks.

4. Add the chicken to the cranberry, walnut & grape mixture.

5. Add the mayo, yogurt, preserves & chili garlic sauce & mix until well coated.

Serve on bread as a sandwich or over a bed of lettuce.

Azie

One of my favorite restaurants, Azie, happens to be in my hometown of Media, Pa. Over the holidays my parents, the SC & I celebrated our engagement with a fabulous dinner here. Azie features a “global cuisine” with influences from Japan, Thailand, France & Italy.

The restaurant has multiple rooms and has two stories, I love eating in each and every room because they each have a unique look to them

We started with some fabulous calamari and a New Philly Roll which features tempura shrimp, cream cheese & kobe beef on top.

Mom ordered the Rock Shrimp {tempura shrimp with a fabulous sauce}

Dad ordered the night’s special {monk fish served over rice}

I was boring & ordered some chicken noodle soup that came in a ginormous bowl {think I should register for those? Haha!}

The SC opted for a gorgeous plate of meat

Since we were celebrating we ordered two desserts: The Chocolate Bomb {chocolate soufflee with mint ice cream} and Apple Strudel {with cinnamon ice cream}

If you are ever in Philly it is worth the trip to the ‘burbs to eat at this fantastic & cutting edge culinary restaurant!

Clam Dip

A staple at any Nashville Nosher family get together is our “oh-so-fancy” recipe for clam dip. I’m not sure exactly where this recipe originated from by my dad’s side of the family has been making it for as long as I can remember.

The SC turned his nose up to it the first time I described it to him but now he is devout fan as well. Good thing, because this appetizer will be making a regular appearance at all of our future holidays as a married couple :)

Clam Dip

A Family Favorite!

Ingredients:

1 package cream cheese
{you can use light or fat free if you so desire}
1 can minced clams
1 tablespoon Worcestershire sauce
potato chips for dipping

Directions:

1. Drain clam juice into a cup and keep nearby. Combine cream cheese, clams & Worcestershire sauce. Stir with a fork {or beat with egg beaters} & slowly add clam juice {about 1/4 cup} until a thick & creamy texture has been obtained.
2. Serve chilled with potato chips.

A Christmas Surprise

I’m back! I’m alive & well…I had a WONDERFUL Christmas which included 10 days in Pennsylvania, New York & Vermont with the SC & my family.

On the day after Christmas, the SC & I went into New York City. As soon as we parked our car at 10 a.m. the first snow flake began to fall. By midnight 10 inches had fallen in the city! We had a magical time which included seeing Promises, Promises on Broadway!

After the musical we braved the blizzard to make our way to Central Park where my sister & mom were meeting us. We ended up at the corner of Central Park where the Plaza hotel sits. I really just wanted to run into the hotel to meet my family & get out of the cold but the SC insisted that we go into the park for a minute. Why would he make me do such a silly thing?

I said yes, {of course!}, & an October Nashville farm style wedding is in the works :)

 

We celebrated with an amazing Italian dinner at Il Punto Osteria Gelsi with my sister & mom. Although our waitress was in fact Russian she told us she had to learn Italian because the entire kitchen staff only speaks Italian. It doesn’t get much more authentic than that! Highlights of our meal included:

homemade pasta an addition of some surprisingly delightful blueberries in the sauce

Some of the largest & most delicious calamari rings I have ever seen! I even put one on my finger as joke {haha I’m so clever!}
stuffed artichokes

We toasted our engagement with some Port that was graciously given to us “on the house”

The restaurant, meal, day & especially the occasion {love!} is one we will never forget!

Christmas Dinner & NYC Suggestions Please :)

Well the SC & I are off for a very yankee christmas :) I, for one, cannot wait to get back to my northeastern roots, see my family, & indulge for one more week before new years resolutions kick in!
However, I need some help from all of my lovely readers. We would like to add some southern flair to our Christmas dinner. Please make suggestions on side dishes, appetizers or desserts that have a southern quality to them (but have ingredients you can find up north!)
Also, we will have the chance to spend a day in NYC! I’ve been a number of times but am hoping to hit up some great “foodie” places. Have any suggestions?
Thanks bunches. I’m signing off for about a week. I’m sure I’ll be back with many recipes, meal recaps & stories of our 13 hour + road trip!
