Last day as Heather K

{Alright folks, grab a cup of tea & get comfy because this is a long one….}

The whole week before the wedding was pretty much amazing except for the fact that I was diagnosed with STREP throat 5 days before saying “I do”. A nice shot in the bum had me feeling a little better but I was never 100%. Oh well, I wasn’t going to let a lil ole cough get me down!

My very best friend Rachel flew all the way from New Zealand to be in the wedding {& to finally meet the SC!} She & I hadn’t seen each other in 5 years but we picked right back up where we left off & she definitely earned the title of BFF by accepting all my bridezilla ways & helping me out tremendously as I prepared for the big day. My mom also got into town the week before the wedding & was a huge help as well…she even painted our front door & helped me host a wine & cheese event for out of town family so they could see my house on Thursday night.

The day before the wedding my other best bud Krista flew in that morning & we all quickly primped in my tiny bathroom & then rushed off to my bridal luncheon being hosted by my soon to be sister-in-law’s & momma-in-law.

The SC’s sister, Nancy, graciously opened up her beautiful home to all the ladies in my family & my close friends. It was a delicious lunch & featured delicious cake from Nancy’s {& now my!} favorite bakery .

From there I frantically threw clothes into a suitcase for an overnight stay at the Embassy Suites with my bff’s & a whole week in Italy for our honeymoon. Then it was off to the farm for our rehearsal!

The lights were lit in the barn & being there with all of the members of our wedding party made things even more “real”. the bestest friends a girl could ask for! Just wish we all lived in the same state, or country! :(

Next it was off to the delicious rehearsal dinner at Sperry’s in Cool Springs.

The fun didn’t end there & I ended up joining my parents, aunts & uncles & honorary family members at Tin Roof II for a few drinks & some dancing! I finally hit the sack around midnight & surprisingly fell right asleep…

ITALY here we come!!!!

In exactly one month the SC & I will be holding our wedded hands together & strolling down the streets of Rome, Italy on our honeymoon. To say I am excited is obviously an understatement. I cannot wait to see all of the historic sights & of course let the wedding diet go & indulge in copius amounts of gelato & italian pasta!

However, with the wedding & new job I haven’t had a ton of time to research Rome & all of it’s fine attractions & eateries. Have any of you been before & if so what do you suggest? Thank you! I promise an extensive post on all of the fabulous food & good times once we have returned.

Out of town bags

Well folk, we are officially 1 month away from the big wedding day! I am so excited & ready for the day to be here. However, there are still a few things to be done so I will savor these 30 days and try to make the best of all of them before I become Mrs. West.

One of the most important things to check off the ever growing wedding to do list is to purchase supplies for the out of town bags. I would love to have a fun gift bag awaiting each person who has traveled to Nashville for our big day. Many have never been to Nashville or Tennessee for that matter & I want to welcome them with some southern delights.

I will definitely be including Goo Goo Clusters, tiny bottles of Jack Daniels & Moon Pies. For all of you Nashville readers, I am wondering if there are any snack items you think I should include…maybe Olive & Sinclair chocolate bars? And for those who live elsewhere, what other things do you suggest?

Forbidden Rice

I am in love with Whole Foods & Traders Joe’s. To me, the perfect afternoon would be spent pursuing each and every aisle, carefully examining each product while dreaming of future meals. Luckily for me, I have a friend, Karisa, who is a foodie just like me & also loves these stores. The other weekend we spent most of our day at these two grocery stores (yes we ate breakfast & lunch at Whole Foods!)

While at Whole Foods I was sneaking a peek into each bulk bin drawer & noticed one full of black rice. BLACK rice. That in itself was enough to get me to open the drawer and sneak a better peek. Even better the name of the rice is “Forbidden Rice.” I totally had a Garden of Eden moment & thought, heck if this is “forbidden” I need to try it!

So I filled a cute little brown paper bag with some rice & went on my way. A few nights later the SC was making some mahi {frozen from trader joes & so delicious!} & I suggested that he make the forbidden rice. A little googling gave us some easy directions.

The end result was a slightly nutty, chewy & delicious starch to accompany your main dish. This definitely is a far cry from white rice & favors wild brown rice in taste & texture. While the black color may not be all that appealing, it sure makes dinner a little more exciting!

Black Forbidden Rice

Ingredients:

1 cup rice
2 cups water
1 tsp butter
dash of salt

Directions:

1. Place well rinsed rice in a pot with salted water.
2. Bring to a boil, cover & simmer on low heat for 25 minutes.
3. Remove from heat, add 1 tsp butter & fluff rice.
