Orzo Salad

I found this recipe a few months ago on In No Simple Language’s blog. She posts Menu Monday’s and posts the recipes she and her husband are going to make all week. They always look so good. I wish I could be that disaplined but I am more of a fly by the seat of my pants foodie. I get a craving and then I make it immediately! I did adapt it a bit by adding some spinach and didn’t add any artichokes because I forgot about them when I went to the store. Sad, I love artichokes!

    yum! i love orzo. and i wish we had a trader joes i've heard such wonderful things!
