The Perfect 4th of July Cake

It’s no secret that I love The Pioneer Woman. Her website is amazing and every recipe that I have tried has been phenomenal. Last summer I tried out her strawberry cake and brought it to my friends BBQ where it was a huge hit (I think I even converted some PW followers!) So naturally this year I decided to stick with the tried and true and bring the same cake again. My cake and I were met with a warm reception and some “strangers” remembered us both!
This time I got the SC involved…he is more of a cook than a baker so I thought he looked cute adding ingredients to the KitchenAid.

The only bad thing about PW is that her recipes tend to be Paula Deen style (lots of butter, cream, sugar, etc!) I lightened the cake up slightly by using light sour cream and 1/3 less fat cream cheese for the icing. To me it still tasted delicious and you couldn’t tell at all! Btw does anyone know how light butter does in cakes? I’m guessing not so well…

Hello yummy, beautiful mound of icing (the SC made it all beautiful!) He pays much more attention to detail than I do.

And he even decorated the top! Beautiful!

And now we are all ready to go to the BBQ!
